Fermented 50% in neutral French oak and 50% stainless steel. The oak gives texture and the stainless steel preserves fruit aroma and acidity. Fermentation was stopped at 17 g/L of sugar to balance the high acidity. Aromas of peach and green apple with hints of pineapple. Green apple with present acid on the palate.
